Sauteed Flank Steak with Arugula and Roasted Cauliflower and Tomatoes

1 cup chopped cooked, drained spinach
2 tablespoon chopped onion, cooked with the spinach
¼ cup nonfat cottage cheese (if tolerated for optimal weight loss)
1 egg white, whipped
Preheat oven to 350°F.
Mix spinach & onion with cottage cheese: fold in egg white. Pour into an ungreased small baking dish. Bake for 20 to 25 minutes. Season to taste after baking. Serves one & has about 105 calories & 0 grams of fat.
